Flood usually means water entering from outside, such as overflowing rivers, surface water after heavy rain or the sea. Escape of water means water leaking from inside the property, such as a burst pipe or a leaking appliance. Policies treat them differently, so it's important the claim is made under the right section.
It depends on how much water got in, how long it stayed and what the building is made of. It's often several weeks. Repairs shouldn't start until moisture readings show the building is dry, otherwise problems like damp and mould can follow.
